For example, com. coffee ext. (26% solids by wt.) was chilled to 55° F and held for ~60 min to ppt. Fe-reactive compds., the supernatant was centrifuged, and the centrifugate was further processed. Fe4(P2O4)39H2O in 40% citric acid was mixed with di-Na Ca EDTA at 1:7 by wt. and the mixt. added to the coffee ext. at 0.1 g of Fe/100 g sol. coffee solids, the product was spray dried, and the powder was agglomerated. The brew prepd. from this product was not noticeably different in appearance from beverage made with com. instant coffee, and adding cream did not produce color variation between the 2 samples.]
