On addition of 50 mg EDTA to a standard test meal of high Fe availability which represented a typical American dinner and to a semisynthetic meal of low Fe availability, both of which contained 4.1 mg Fe, Fe absorption in 45 normal men fell by about one-half. Studies with 55Fe and 59Fe showed complete isotopic exchange of ferric EDTA with dietary nonhaem Fe. In other experiments 6 to 500 mg EDTA was added to the meals. At a 1:1 molar ratio of EDTA to Fe, absorption of nonhaem Fe was reduced to 72% and at a 2:1 molar ratio, to 50% of absorption without EDTA.]
