(CA) [An EDTA-washed soy protein-based diet was studied for possible contamination with EDTA and also to evaluate its acceptability and palatibility by human subjects. EDTA-washed soy protein-based diets were prepd. by repeated washing with Na2EDTA followed by washing with deionized water and filtration, but 14C-EDTA was used. Scintillation counter anal. showed no traces of 14C in the prepd. diet. The diet was also prepd. using inactive EDTA and fed to 10 volunteers for sensory evaluation. The palatibility and acceptability of this diet are generally very poor. This diet thus may not be useful for inducing Zn deficiency in human volunteers on a long term basis.]
