Appl. 26 Nov 1965; 2 pp. (CA70) [A wet precooked fruit-rice cereal product having a pH adjusted to 4.3-4.6 and prepd. from rice flour with apple puree and banana puree and including a sequestered Fe salt is described. The crit. pH adjustment agent can be alk. or acidic as required. Effective alkalyzing agents include Na2HPO4, Na2CO3, NaHCO3; Na2HPO4 (anhyd.) is most effective. Acidifying agents include food acids such as citric, fumaric, malic, ascorbic, and adipic. Citric acid is esp. effective. The most effective sequestering agents for the digestible Fe salts are EDTA esters. Apple puree may be varied 30-70% by wt.; banana puree 2-20% (preferably 5-10%); rice flour 5-25% (preferably 10-15%); and sugar to 25% (preferably 10-15%). This 1 formulation includes apple puree 58%, rice flour 10%, white sugar 16%, banana puree 5%, food starch 5%, tapioca starch 5%, vitamins, seasonings, and others 0.9%, di-Na EDTA dihydrate and FeSO47H2O 0.1%. The pH is adjusted to 4.4 and the slurry is heated to 195°F. for 1-5 min. and then processed by conventional canning methods.]
